This restaurant is run by Ome Farm, a pesticide- and chemical-free farm located in Ome City, Tokyo, with the goal of producing safe and healthy dishes close to the city center. The surplus produce from this restaurant is used as compost in the fields to grow vegetables, creating an organic link between the farm and restaurant and models local production for local consumption in Tokyo. The cuisine is prepared with the delicious, hearty vegetables of Ome Farm and results in dishes that are safe for customers of all kinds of diets to enjoy.
