Jinbocho・Ochanomizu Sasamaki Kenukisushi
Sasamaki-zushi is a sushi wrapped in bamboo grass. In the old days, there was no refrigerator, so people used a lot of salt and vinegar to make it last. Now that refrigerators are more common and customers' tastes have changed, salt and vinegar have been toned down.

Tane (Sushi Topping) and Sushi-meshi (vinegared rice)
The Tane are tai (Sea bream), oboro
(mashed and seasoned fish), egg,
seaweed, silver-skinned fish and white
fish varying according to the season.
Sushi-meshi is made to be sticky so that it lasts longer. It is best to leave it for about 3 hours after making it so that you can enjoy the fragrance of the bamboo grass.
